300 calorie lunch tortilla pizza

This is one of my favorite lunches because it’s pizza, duh, and it’s really fast to make. Plus, you can eat the whole pizza without eating thousands of calories. What could be better than that?!

300 calorie lunch tortilla pizza

Ingredients

  • 1 whole wheat tortilla (I like the Fit & Active brand)

  • 8 slices nitrate-free pepperoni (I use the Hormel brand)

  • 3 TB your favorite marinara sauce

  • 1/4 cup shredded mozzarella cheese

  • 1/2-1 cup (depending on how much greens you like) spinach or arugula

Directions

  • Heat pan on stovetop at approx. medium heat
  • Add tortilla
  • Add marinara sauce on top of tortilla
  • Add greens on top of marinara
  • Add cheese on top of greens
  • Add pepperoni on top of cheese
  • Put a cover on the pizza and let cook until cheese is melted and greens are wilted. This shouldn’t take more than a couple minutes.
  • Slide on to a plate, slice, and eat!

Notes

  • 1/4 cup of cheese isn’t very much which is why the greens help to bulk up the pizza. You can always add more cheese but it won’t be a 300 calorie pizza, so just be aware of that.
