Banana Bread Oat Mug Cake

This recipe is great for when you want a sweet treat for breakfast but don’t have time to whip out a batch of pancakes or muffins.

Banana Bread Oat Mug Cake

Ingredients

  • 1/4 cup steel cut or old fashioned oats

  • 1/2 banana, mashed

  • 1 egg

  • 2 TB milk

  • 5 drops liquid stevia

  • pinch baking soda

  • pinch baking powder

  • handful chocolate chips

  • 1/2 tablespoon – 1 TB nut butter

Directions

  • Grind up oats in a blender until it forms a flour
  • Add banana, egg, stevia, milk, baking soda, and baking powder to blender
  • Blend until it’s a very smooth consistency
  • Spray inside of a mug with oil (optional)
  • Add batter to mug
  • Sprinkle handful of chocolate chips into the batter
  • Add a dollop of nut butter to the center
  • Microwave for approximately 1 minute. Because microwaves can vary so much, check after 1 minute and add 30 seconds if it’s still loose.

Notes

  • If you double the recipe for a larger person, microwave for 2 minutes
