I think if Chipotle or Qdoba tried to put a low-carb option on their menu, it would be this recipe because it’s just that good. Don’t bother with plates either because you’re just going to eat the whole sheet anyway. Set up camp in front of the TV and enjoy.
Ingredients:
- 1 head of cauliflower
- 1-1.5 pounds ground beef
- 1 jalepeño pepper
- 1/4 cup red onion
- 1/2 cup colored bell pepper
- Your favorite salsa
- Taco seasoning (we used Flavor God Taco Tuesday)
- Plain Greek yogurt
- Avocado
- Shredded mozzarella or cheddar cheese
- Sriracha (optional)
- Olive oil
Instructions:
- Pre-heat oven to 425 degrees Fahrenheit
- Wash and chop all veggies – these will be used as a topping so chop fairly small except for cauliflower
- Toss cauliflower in 3 tablespoons of olive oil and taco seasoning
- Bake cauliflower on sheet pan for 15 minutes
- While cauliflower is baking, cook up ground beef on the stove with a little salt, pepper, and taco seasoning
- After 15 minutes, top cauliflower with ground beef, peppers, and onion
- Bake for another 10 minutes
- Add cheese to cauliflower and place back in the oven for a minute or until cheese is melted
- Once cheese is melted, top with Greek yogurt, salsa, sriracha and avocado
- Eat up!
