Dole Whip is probably my favorite iconic Disney treat, and if you know me, I’ll do just about anything to bring some Disney magic to Wisconsin. I’ve made a couple Dole Whip recipes before, but without a doubt, this one is the winner. Dole Whip is best described like a pineapple sherbet. This version is much fluffier than the one at Disney. As my husband said, “It’s like eating a pineapple cloud.”

1 cup frozen pineapple
1/3 cup canned coconut milk
1 teaspoon powdered baking stevia
(You could also try 2 drops liquid stevia)1-2 tablespoons of water only if needed
Directions
- Add pineapple, stevia, and coconut milk to blender
- Blend for 1-2 minutes. Only add water if needed. Remember the end result should be like soft serve ice cream. If you want more dense Dole Whip, then blend for 20-30 seconds. Trust me, you want it to be super fluffy!
