I love this recipe to meal prep for an easy grab-and-go breakfast. Because there’s no protein source in the cookies, I highly recommend pairing it with yogurt or eggs to make a more well-rounded breakfast to balance your blood sugar.
Banana Oatmeal Breakfast Cookies

1 cup dry old-fashioned rolled oats
2 tsp. ground cinnamon
¼ tsp. salt
2 medium ripe bananas, mashed
¼ cup dark chocolate chips or raisins (but let’s be honest, chocolate is better)
¼ cup chopped raw walnuts
If your bananas aren’t super ripe and sweet, then add 1 TB of pure maple syrup
Directions
- Preheat oven to 350° F.
- Lightly coat large baking sheet with spray. Set aside.
- Combine oats, cinnamon, and salt in a medium bowl; mix well.
- Add bananas, raisins, and walnuts; mix well.
- Drop by rounded Tbsp. onto prepared baking sheet to form 16 cookies; flatten cookies with a spatula.
- Bake for 15 minutes or until firm.
Notes
- I personally store these in a ziplock bag in the fridge.
