I was craving breakfast for dinner and wanted to whip out the waffle maker. Most waffles (and pancakes too) are super carb-heavy and not a whole lot of protein or fiber. Because of this, it’s best to pair it with some eggs for a more balanced meal. So just for fun, I thought I’d try to make my own protein waffle and to my surprise, it turned out incredible. So good that David said I’m in charge of waffles from now on!
Fiber-Filled Chocolate Protein Waffles
Recipe by adminThis recipe makes 2 waffles in our waffle iron. Our waffle iron is also MASSIVE so you can probably get more out of this if you have a non-Belgian waffle iron.
Macros per waffle, assuming you make 2 waffles total –
Fat: 18g
Carbs 65g
Protein 30g
Fiber: 11g
Sugar: 1g
Ingredients
1 cup oat flour
1 egg
1 scoop chocolate protein powder (see notes)
1 scoop unflavored collagen protein
2 TB chia seeds
1 TB coconut oil, melted
1/4 cup white flour (optional)
Directions
- Mix wet ingredients in one bowl
- Mix dry ingredients in a bowl separate from the wet ingredients
- Mix wet and dry mixtures
- Add to waffle iron until fully cooked
Notes
- For oat flour, I buy organic rolled oats and grind them up fine in a blender until it’s flour
- For chocolate protein, whey protein is best. I used the Designer Protein Gourmet Chocolate. I like this one because it’s just plain protein, no extras.
- I used Orgain unflavored collagen peptides.
- Optional: add chocolate chips into the batter OR melt chocolate on top instead!
- The white flour might not be necessary in this recipe. I added it because I was worried my husband would notice that it was just oat flour, but I really don’t think it added much to the recipe. Next time I will try without the white flour. However, because it turned out so well with it, I included it in this recipe.
